Banana-Stuffed French Toast

Ingredients

  • 2 ripe bananas
  • 4 slices of thick bread
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp butter
  • Maple syrup and powdered sugar for serving

Instructions

  1. Peel and mash the bananas in a bowl until smooth.
  2. In a separate bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
  3. Spread the banana mixture onto 2 slices of bread and top with the remaining slices to make 2 sandwiches.
  4. Dip each sandwich into the egg mixture, ensuring both sides are well coated.
  5. In a skillet over medium heat, melt butter and place the sandwiches in the skillet.
  6. Cook for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove from the skillet and slice each sandwich diagonally.
  8. Serve hot with maple syrup drizzled on top and a dusting of powdered sugar.
