Creamy Lemon Spinach Pasta

Ingredients

  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Pour in the heavy cream, stirring constantly, and bring to a simmer.
  4. Add grated Parmesan cheese, lemon zest, and lemon juice to the skillet. Stir until the cheese is melted and the sauce is smooth.
  5. Add fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes.
  6. Season the sauce with salt and pepper to taste.
  7. Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the creamy sauce.
  8. Cook for an additional 1-2 minutes until the pasta is heated through.
  9. Serve the creamy lemon spinach pasta hot, garnished with fresh parsley and extra Parmesan cheese.
