Honey Balsamic Glazed Salmon with Roasted Vegetables

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, honey, soy sauce, garlic, ginger, black pepper, and salt to make the glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze over the salmon fillets, reserving some for later.
  4. Roast the salmon in the preheated oven for 12-15 minutes, or until cooked through.
  5. In a separate bowl, toss the sliced bell peppers, zucchini, red onion, and cherry tomatoes with balsamic vinegar, olive oil, salt, and pepper.
  6. Spread the vegetables on a separate baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  7. Drizzle the remaining glaze over the cooked salmon and sprinkle with fresh parsley.
  8. Serve the honey balsamic glazed salmon with the roasted vegetables on the side.
