In a separate bowl, toss the mixed vegetables with balsamic vinegar, dried thyme, paprika, red pepper flakes, salt, and black pepper.
Spread the seasoned vegetables on a separate baking sheet lined with parchment paper. Lightly spray with cooking spray.
Place both the salmon and vegetables in the preheated oven. Roast for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
Once done, remove the salmon and vegetables from the oven. Serve the honey garlic glazed salmon alongside the roasted vegetables. Enjoy!
