Honey Soy Glazed Salmon with Roasted Vegetables

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, honey, garlic, ginger, and olive oil to make the glaze.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  4. Brush the glaze over the salmon fillets, ensuring they are well coated.
  5. In a separate bowl, toss the sliced bell peppers, zucchini, and red onion with balsamic vinegar, olive oil, salt, and pepper.
  6. Spread the vegetables on a separate baking sheet.
  7. Place both the salmon and vegetables in the oven and roast for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender, flipping the vegetables halfway through.
  8. Once done, remove from the oven and let it rest for a few minutes.
  9. Serve the honey soy glazed salmon on a bed of roasted vegetables, garnish with fresh parsley, and enjoy!
