Honey Sriracha Glazed Salmon with Roasted Sweet Potatoes and Asparagus

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup honey
  • 2 tbsp sriracha sauce
  • 2 sweet potatoes, peeled and diced
  • 1 bunch of asparagus, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the honey and sriracha sauce to make the glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze over the salmon fillets, coating them evenly.
  4. In a separate bowl, toss the diced sweet potatoes with 1 tbsp of olive oil, garlic powder, salt, and pepper. Spread them out on a separate baking sheet.
  5. Place both the salmon and sweet potatoes in the preheated oven. Roast the sweet potatoes for 25-30 minutes until tender and golden brown, and the salmon for 12-15 minutes until cooked through.
  6. Meanwhile, toss the trimmed asparagus with the remaining olive oil, salt, and pepper. Add the asparagus to the baking sheet with the sweet potatoes during the last 10 minutes of cooking.
  7. Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.
  8. Serve the honey sriracha glazed salmon with the roasted sweet potatoes and asparagus. Garnish with fresh chopped parsley before serving.
