Miso Glazed Salmon with Sesame Broccolini and Jasmine Rice

Ingredients
4 salmon fillets (6 oz each)
1/4 cup white miso paste
2 tbsp honey
2 tbsp soy sauce
2 cloves garlic, minced
1 tbsp grated fresh ginger
1 lb broccolini, trimmed
2 tbsp sesame oil
2 tbsp sesame seeds
1 cup jasmine rice
2 cups water
Salt and pepper to taste
Green onions for garnish, sliced
Instructions
In a small bowl, whisk together the miso paste, honey, soy sauce, garlic, and ginger to make the glaze.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the salmon fillets on the prepared baking sheet. Brush the miso glaze over the salmon fillets, coating them evenly.
Bake the salmon in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
While the salmon is baking, cook the jasmine rice. In a medium saucepan, combine the jasmine rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the rice is tender and water is absorbed.
In a large skillet, heat the sesame oil over medium heat. Add the broccolini and cook for 5-6 minutes, or until tender-crisp.
Sprinkle the broccolini with sesame seeds and season with salt and pepper to taste.
To serve, divide the jasmine rice among plates, top with the miso glazed salmon fillets, and arrange the sesame broccolini on the side.
Garnish with sliced green onions and serve hot. Enjoy!
