Miso Glazed Salmon with Soba Noodle Salad

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup white miso paste
  • 2 tbsp mirin
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 8 oz soba noodles
  • 2 cups mixed vegetables (such as bell peppers, snow peas, and carrots), julienned
  • 1/4 cup sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 2 green onions, thinly sliced
  • 1/4 cup toasted sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together miso paste, mirin, soy sauce, honey, rice vinegar, garlic, and ginger to make the glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the miso glaze over the salmon fillets.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the glaze is caramelized.
  5. While the salmon is baking, cook the soba noodles according to package instructions. Drain and rinse under cold water.
  6. In a large bowl, combine the cooked soba noodles, mixed vegetables, sesame oil, soy sauce, rice vinegar, honey, and green onions. Toss to combine.
  7. Divide the soba noodle salad among plates and top each with a miso glazed salmon fillet.
  8. Sprinkle toasted sesame seeds over the top and serve hot.
