Miso-Glazed Salmon with Soba Noodles

Ingredients
4 salmon fillets (6 oz each)
1/4 cup white miso paste
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp honey
1 tbsp sesame oil
2 cloves garlic, minced
1 tbsp ginger, grated
8 oz soba noodles
2 cups baby bok choy, chopped
1 red bell pepper, sliced
2 green onions, sliced
1 tbsp sesame seeds
1 tbsp vegetable oil
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a small bowl, whisk together miso paste, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger to make the glaze.
Place the salmon fillets on a baking sheet lined with parchment paper. Brush the miso glaze over the salmon fillets, coating them evenly.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Meanwhile, cook the soba noodles according to package instructions. Drain and set aside.
In a large skillet, heat vegetable oil over medium-high heat. Add bok choy and red bell pepper, sauté for 3-4 minutes until slightly softened.
Add the cooked soba noodles to the skillet and toss to combine with the vegetables.
Divide the soba noodle mixture among plates and top with miso-glazed salmon fillets.
Garnish with sliced green onions and sesame seeds. Season with salt and pepper to taste.
Serve hot and enjoy!
