Miso Glazed Salmon with Stir-Fried Vegetables

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup white miso paste
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1 small broccoli, cut into florets
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the miso paste, soy sauce, honey, rice vinegar, garlic, and ginger to make the glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  4. Brush the miso glaze over the salmon fillets, ensuring they are evenly coated.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
  6. While the salmon is baking, heat vegetable oil in a large skillet over medium-high heat.
  7. Add the bell peppers, snow peas, and broccoli to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  8. Season the stir-fried vegetables with salt and pepper to taste.
  9. Serve the miso glazed salmon hot over a bed of white rice, accompanied by the stir-fried vegetables.
  10. Garnish with sliced green onions or sesame seeds if desired.
