Spicy Honey Glazed Salmon with Pineapple Salsa

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 cups diced fresh pineapple
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. In a small bowl, mix honey, soy sauce, sriracha, garlic, ginger, paprika, cayenne, salt, and pepper to make the glaze.
  2. Brush the salmon fillets with the glaze and let them marinate for 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the salmon fillets for 4-5 minutes per side, basting with the remaining glaze until cooked through.
  5. In a separate bowl, combine diced pineapple, red onion, jalapeno, cilantro, lime juice, olive oil, salt, and pepper to make the salsa.
  6. Serve the grilled salmon topped with the pineapple salsa.
  7. Garnish with additional cilantro and lime wedges if desired.
