Spicy Honey Glazed Salmon with Roasted Sweet Potatoes and Broccolini

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp olive oil
  • 3 medium sweet potatoes, peeled and cubed
  • 1 bunch broccolini, ends trimmed
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 lemon, sliced for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, sriracha sauce, and olive oil to make the glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the glaze over the salmon fillets, reserving some for later.
  4. In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, smoked paprika, salt, and pepper. Spread them out on a separate baking sheet.
  5. Roast the sweet potatoes in the oven for 20 minutes, then add the broccolini to the same baking sheet and continue roasting for an additional 10-15 minutes, or until the vegetables are tender and slightly caramelized.
  6. While the vegetables are roasting, bake the salmon in the oven for 12-15 minutes, or until cooked through and flaky.
  7. During the last few minutes of cooking, brush the reserved glaze over the salmon fillets for extra flavor.
  8. Serve the spicy honey glazed salmon with roasted sweet potatoes and broccolini. Garnish with lemon slices and enjoy!
