In a small bowl, mix together honey, soy sauce, minced garlic, grated ginger, red pepper flakes, black pepper, and salt to make the glaze.
Place the salmon fillets in a baking dish and brush them with half of the honey glaze. Set aside.
In a large bowl, combine sweet potato, bell peppers, red onion, zucchini, olive oil, thyme, paprika, garlic powder, salt, and black pepper. Toss well to coat the vegetables.
Spread the seasoned vegetables on a baking sheet in a single layer.
Roast the vegetables in the preheated oven for 25-30 minutes or until they are tender and slightly caramelized.
While the vegetables are roasting, bake the salmon fillets in the oven for 12-15 minutes or until they are cooked through and flake easily with a fork.
During the last few minutes of baking, brush the remaining honey glaze over the salmon fillets.
Serve the spicy honey glazed salmon hot with the roasted vegetables on the side.
