Spicy Honey Glazed Salmon with Roasted Vegetables

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 1 large sweet potato, peeled and diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together honey, soy sauce, minced garlic, grated ginger, red pepper flakes, black pepper, and salt to make the glaze.
  3. Place the salmon fillets in a baking dish and brush them with half of the honey glaze. Set aside.
  4. In a large bowl, combine sweet potato, bell peppers, red onion, zucchini, olive oil, thyme, paprika, garlic powder, salt, and black pepper. Toss well to coat the vegetables.
  5. Spread the seasoned vegetables on a baking sheet in a single layer.
  6. Roast the vegetables in the preheated oven for 25-30 minutes or until they are tender and slightly caramelized.
  7. While the vegetables are roasting, bake the salmon fillets in the oven for 12-15 minutes or until they are cooked through and flake easily with a fork.
  8. During the last few minutes of baking, brush the remaining honey glaze over the salmon fillets.
  9. Serve the spicy honey glazed salmon hot with the roasted vegetables on the side.
