Spicy Maple Glazed Salmon with Quinoa Salad

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tsp minced garlic
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together maple syrup, soy sauce, sriracha sauce, and minced garlic.
  2. Marinate the salmon fillets in the mixture for 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Place the marinated salmon fillets on a baking sheet lined with parchment paper.
  5. Bake the salmon for 12-15 minutes, until cooked through and glazed.
  6. Meanwhile, rinse the quinoa under cold water.
  7. In a saucepan, bring 2 cups of water or vegetable broth to a boil.
  8. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  9. Fluff the quinoa with a fork and let it cool slightly.
  10. In a large bowl, combine the cooked quinoa, diced red bell pepper, cucumber, parsley, mint, olive oil, lemon juice, salt, and pepper.
  11. Toss the quinoa salad until well combined.
  12. Serve the spicy maple glazed salmon on a bed of quinoa salad.
  13. Garnish with additional fresh herbs if desired.
