Avocado and Egg Breakfast Toast

Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of red pepper flakes
  • Fresh herbs for garnish (optional)

Instructions

  1. Toast the whole grain bread slices until golden brown.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.
  3. In a non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  4. Spread the mashed avocado onto the toasted bread slices.
  5. Carefully place a fried egg on top of each avocado toast.
  6. Sprinkle red pepper flakes over the eggs for a hint of spice.
  7. Garnish with fresh herbs like parsley or chives if desired.
  8. Serve immediately while the eggs are still warm.
