Savory Spinach and Feta Breakfast Strata

Ingredients

  • 6 cups cubed day-old bread (French or Italian loaf) - 1-inch cubes
  • 1 cup chopped spinach
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large bowl, combine the cubed bread, spinach, feta cheese, and mozzarella cheese. Toss gently to mix evenly.
  3. In a separate bowl, whisk together the eggs, milk, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined.
  4. Pour the egg mixture over the bread mixture in the bowl. Gently toss to coat the bread evenly and let it sit for 10 minutes to allow the bread to absorb the liquid.
  5. Transfer the mixture to the prepared baking dish, spreading it out evenly. Press down lightly with a spatula to compact the ingredients.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
  7. Remove from the oven and let it cool for 5 minutes before serving.
