Sunrise Breakfast Hash

Ingredients

  • 2 large potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, finely chopped
  • 4 slices of bacon, chopped
  • 4 eggs
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped bacon and cook until crispy, then remove and set aside.
  3. In the same skillet, add diced potatoes and cook for about 10-12 minutes until they start to brown and soften.
  4. Add chopped onions and bell peppers to the skillet, cook for another 5 minutes until vegetables are tender.
  5. Season with paprika, garlic powder, salt, and pepper. Mix well.
  6. Create 4 wells in the hash mixture and crack an egg into each well.
  7. Cover the skillet and cook for an additional 5-7 minutes until the egg whites are set but yolks are still runny.
  8. Sprinkle the crispy bacon over the top of the hash.
  9. Serve hot and enjoy!
